Where do you come from and what is the culinary speciality of your area ?

I come from Cognac, culinary specialties are not really sensational (snails, Manslois: cheese from goat's milk, or cornuelles : biscuits that seniors loved).
The only one to really stand out is the cognac

I suggest that every week someone brings a specialty of his region !

It's a very good idea to organize a tasting with all specialities. We did it last year, it was delicious

So as you may know i'm from Bordeaux! I have the chance to live in a region which is offering a wealth of delicious specialities. Aquitaine is of course known for its famous wines but also for its succulent canelés (i swear ill bring canelés one week aha) , pastis landais(a brioche), oysters(from Arcachon), and macaroons.We have also many specialities but more from the French Basque country like Espelette chili pepper and poulet basquaise (a delicacy! It is chicken cooked with Espelette chili pepper and sweet peppers).

I come from here (Charente). So everyone knows that cognac is my region speciality. But we have also what we called "omelette charentaise"  it consists in making an omelette with your leftovers.

A traditional meal for the "poorer" people of all areas I think. Especially related to the "rich poor" of agricultural areas.

You may be right but it doesn't explain why people in my region call this an "omelette charentaise" if it's not from here...  My region is also known for its "galette charentaise" (something i forgot to mention earlier)

and its chausson charentaise.

I come from Castelnaudary and we are known for our cassoulet !! Indeed, Castelnaudary is known to be the world capital of the cassoulet ! We even have the Cassoulet festival !! Please, do not say that the cassoulet comes from Carcasonne or from Toulouse otherwise I am going to get angry..
We also have biscuits named "Alleluia" and a cake called "Gloria".
The alleluia has a very distant origin. Around 1800, a soldier of the Empire was arrested at Castelnaudary and gave the recipe to a patissier. At the arrival of Pope Pius VII in 1814, the patissier offered him his specialties. The Pope exclaimed, "Hallelujah!" And that's where the name comes from! "

I have eaten Cassoulet in Castelnaudry. Beautiful port for the midi canal but depressing town!

I live near Montargis (45) And the culinary specialties are ... "Les Crottes du Chien" , so glamorous ! These are chocolate confections obviously. I can't tell you if it's good, I never tasted it.

I come from Angouleme and i live at Angouleme. I think the specialties of this town are "le pineau des charentes", "les grillons charentais" and "truffe de l'angoumois".
I never eat the "truffe de l'angoumois" but i will give it a try one day.
The "grillon des charentais" is really good but too much fleshy. If you hate the fleshy don't eat them !
On my opinion, the "pineau des charentes" is better than the wine we produce in Charente.

It's excellent and the decoration is awesome !
